Posted July 4th, 2007 10:54 PM IP  I'm not sure if I stuck this in the right category or not... We usually go camping 3 times with next weekend being our first for the summer. I was wondering what you all make to eat while camping besides hotdogs 
I feel like I always make that same old... pizza pockets, taco pockets, and pizza pockets again. You get the idea? I have made corn on the cob over the fire before but it's kinda messy and hard for a 15 month old to eat. I'd wecome any ideas you have. Michelle

Posted July 4th, 2007 11:35 PM IP  Tinfoils over the fire. You can put about anything in--potatoes and any kind of vegetables. They are also good with chunks of chicken meat or some other kind of meat also. Make sure you put lots of butter in and some seasonings. We were camping last summer with some friends and one of them had this for their meal. We all made our own and just kind of put in whatever we wanted and put whatever seasoning on we wanted. We wrapped them in several layers of tinfoil and put them right in the fire. They turned out very delicious!
Have fun camping! We were just camping with my family this past weekend. We did a smaller version of the tinfoils and put in potatoes, green beans, onions, cheese, butter, salt, and pepper. They were yummy also. We put them on the grate instead of right in the fire. Joanna

Posted July 5th, 2007 09:12 AM IP  I found tinfoil bags at walmart that work wonderfully and are a little stronger. You can shake the stuff around when you turn them. I usually allow a half hour when I do ours. Sometimes if I have grill something I just put potoaes in the bag to go with the meat.
We grill chicken, brats, porkchops and lots of meats but that's not really down Jeremy's line is it? Shannon

Posted July 5th, 2007 09:19 AM IP  I was gonna suggest the tin foils, too. Not only is that one of our favorite camping meals, its something I make frequently evenings here at home in the summer. I use any kind of meat, ( hamburger usually, but have used chicken or beef chunks, too) chunk or slice potatoes, cabbage, carrots, onions, or whatever you have on hand, lots of seasonings and butter. Wrap tightly in tin foil or use a tin foil pan covered with tin foil, and set it on hot coals. ( at home we use a gas grill-works just as well) Takes 45 minutes-1 hour. Definitely one of the best and easiest meals and one of the most-loved at our house.
You could also make shish-kabobs, hamburgers, brats, grilled chicken,or marinated pork chops. Ahh.. talking about camping and all the good food gives me the itch to go again. Hope this helps. Have fun camping!! ~Freida

5 medium potatoes, thinly sliced
1 med. onion, thinly sliced
6 Tbsp. butter
2 Tbsp. parsley
1 Tbsp. Worcestershire sauce
1/3 c. chicken broth
1/3 c. cheddar cheese, shredded ( I use more)
Place the potatoes and onions on a large piece of heavy duty tinfoil (about 20 x 20). Dot with butter. Sprinkle with parsley, salt, pepper, Worcestershire sauce, and cheese. Fold foil up around the potatoes and add broth. Cover completely and seal edges well. Grill, over medium coals for 35-40 minutes, or until potatoes are tender. 4-6 servings.
This is one of my favorites. I often make it at home on the gas grill. I have also done it in the oven, but then it doesn't have the good smokey flavor to it. If I do it when we're camping, I only do a half a recipe so I don't have leftovers.

Posted July 5th, 2007 08:13 PM IP  did you ever hear of mt. pies? You can buy the pie irons at Wal-mart in the sporting goods dept. The iron is the size of a slice of bread and has long handles on so you can toast your sandwich over the fire.
Begin by spraying your iron with non-stick cooking spray;
place a slice of bread on your iron and top with: ham, hamburger, sausage, cheese, pizza sauce, onions, peppers, mushrooms etc. top with another slice of bread and toast over camp fire.
Other Versions:
Breakfast:
bread, eggs, meats, cheese, veggies
Dessert:
bread, pie filling

Posted August 6th, 2007 07:01 AM IP  We never camped much but our son used to a lot before he was married and one time he took us on one of his camping trips and it was so refreshing. He took a frying pan, a coffeepot, a cooler filled with a can of peaches, sugar wafers, a doz. eggs, a box of bacon, hotdogs, tortillas, an onion, coffee, salt & pepper, and that was just about it. He carved a spatula from a tree branch to stir thngs with, and we ate everything out of the tortillas so we didn't need utensils. We slept under the stars (when it's too dewy he'd tie a plastic sheet between trees) and it was certainly roughing it but so easy and relaxing. I think it would even work with children.

I think your son lives in the same community as my cousin, she is the school teacher out there and I know she loves hiking and camping like that. Shannon

Use 2, so that there's a square and let one half hang off the edge till you get the pie filling and cream cheese spread on the inside, then fold the other half over and pinch the edges closed. You can sprinkle pwd. sugar over top when it's done if you want to. Amber

I see my friends aren't the only smart ones They are wonderful- with a capital w!! We used black raspberry pie filling. Now if they would only be low calorie... amy

But I just have to share what I had the other night over a campfire. It was mentioned in part before. They had stuff there for ice cream sundaes or dessert mountain pies. I took the mountain pie maker and had a peanut butter/marshmallow/chocolate chips/chocolate syrup/carmel syrup/nuts dessert. It was VERY good. It doesn't sound like it would be good in between bread but it tasted like a very rich dessert. Liz

Posted September 27th, 2007 10:31 AM IP  We had pretty good success with the mt. pie irons last week while camping. We didn't have enought of those so we also fixed sandwiches w/ the same fixings and toasted over the fire in hand-held grates. They were just laid on top of another grate over hot coals. We tried the dessert w/ the cresent roll dough but were about too full to eat any! We cut them in triangle pieces, making four out of one and they looked like cute turn-overs. And the Campfire potatoes were good, too. We used a beef broth mix, then my DH put mushrooms in some of them. (he LOVES mushrooms!) We used two foil pans, covered tightly w/ foil. And the pans were scraped pretty much empty. The potatoes were sevred w/ kabobs. This was on our youth camping trip. Jan
