Posted November 17th, 2008 01:00 PM IP Mushroom Cheese Bread

1c. shredded mozzarella cheese
1 can mushrooms, drained
1/3 c. mayonnaise
2 Tbl. shredded parmesan cheese (I used grated)
1 loaf French Bread
In a bowl, combine cheeses, mushrooms and mayo. Cut bread in half lengthwise and spread with cheese mixture. Broil for 5-10 min. or until lightly browned. Slice and serve warm.
This stuff is amazing! If you like mushrooms, you'll love this bread! Goes great with white chili!
Sometime I'll post my recipe for french bread.

Posted November 19th, 2008 08:39 AM IP Here's one of the few breads that I've been successful with.
Butterhorns
2 Tb. Yeast
1/3 C. Warm Water
2 C. Warm Milk
1 C. Crisco
1 C. Sugar
6 Eggs
2 ts. Salt
4 C. Flour
Dissolve yeast in water.
Beat remaining ingredients together until smooth. Add yeast mixture. Beat again. Add:
5-6 C. Flour
-Enough to make a soft dough, slightly sticky. Knead until well mixed. Put in greased bowl, grease top of dough, and let rise to double. Punch down and divide in 4 equal parts. Roll each into about a 12"-15" circle. Cut into wedges, (I usually do either 12 or 18 per circle, depends if you want size or quantity.) Roll up, starting at wide end. Let rize double again and bake, or freeze (before rising) on cookie sheet, then transfer to container or freezer bags. So handy to pull a few out of the freezer on Sunday AM and they rise about perfect by the time you get home from church.
I think I bake them at 350, butter tops when you get out of oven. (Or use honey butter, even better!)
Sorry I don't have pictures. Probably couldn't figure out how to put them on anyhow!

Posted November 19th, 2008 10:30 PM IP Sesame French Bread
1 pkg. instant yeast
1 1/4 c. warm water
1 Tbl. sugar
1 Tbl. oil
1 tsp. salt
3-3 1/2 c. all-purpose flour (I sometimes use bread flour)
1 Tbl. cornmeal
1 Tbl. sesame seeds
In a large mixing bowl, Mix together oil, water, salt, 2c. flour and yeast. Beat until smooth. Add enough remaining flour to form soft dough. Knead until smooth and elastic. Place in a bowl coated with nonstick cooking spray, turning once to grease top. Cover and let rise until double. Punch dough down and roll into a 15x10 in. rectangle. Roll up from long side. Place seam side down on baking sheet coated with Pam and sprinkled with cornmeal. Beat egg white with 2 tsp. water and brush over loaf. Sprinkle with sesame seeds. Cover with saran wrap sprayed with Pam and let rise until double, about 30 min. With a very sharp knife, cut diagnal slits in top of loaf. Bake at 400 for 25 min. or until lightly browned. Remove from pan and cool on wire rack.
I often double the recipe and put the extra loaf in the freezer. This recipe Always turns out delicious! Much better than boughten bread! Amber

Posted November 24th, 2008 10:42 PM IP My favorite bread to bake is my easy to make white bread.
4 1/2 C. warm water
1 C. sugar
4 tsp. salt
1/2 C margarine
1/4 C. yeast
Combine all this in bosch mixer, add 10-12 cups of flour. Once all flour is absorbed & dough no longer sticks to the mixer. Mix on high for 4 minutes [this is the kneading process]. Remove dough hook, cover bowl let dough rise for 20 minutes. Remove dough from mixing bowl, divide into 6 loaves. [I roll out each portion of dough to get all the bubbles out.] Put in well greased pans & let rise till double. Bake at 330 degrees for 28 minutes. Mariann married to the love of my life ~ Dale ~

Posted April 29th, 2009 08:35 AM IP This quick bread is the "essence of spring/summer". Just last week I had to pull it out of my recipe box. I didn't have any fresh Rhubarb, but I used some frozen I had on hand. I can't make enough of it for my husband. This is also great made into muffins.
Rhubarb Nut Bread
1 1/2c. sugar
2/3c. oil
1 egg
1c. sour milk
1 tsp. soda
1 tsp. salt
1 tsp. vanilla
2 3/4c. flour
1 1/2c. rhubarb
1/2c. chopped nuts
Topping:
1/3c. sugar
1T. butter
cinnamon to taste
Mix all ingredients except for topping in order given. Pour into 2 greased loaf pans. Mix topping until crumbling and sprinkle over top of loaves. Bake at 350 for 45 minutes.

Very nice!! (even if I did forget the crumbs and had no nuts. ha) Jessica

Posted July 28th, 2009 07:17 PM IP Actually I just buy wheat germ and never even thought about it needing to be toasted! don't know if it would matter or not. You can sort of taste the nutty flavor in it without it toasted, would it make a dif toasted?

Not sure what you mean by "strong" but I've found that I get the best results with white or "golden" wheat versus the red wheat. Your local bulk food store will probably have both. My mom's recipe is the one I use for freshly-ground-100%-whole-wheat bread, and it's delicious! Takes gluten, honey, dough enhancer...I can post it if you want. Jenn

Posted July 29th, 2009 09:09 AM IP Here's my favorite bread recipe, it has a little bit of whole wheat flour in it, which we like. One thing I really like about this recipe is the fact that I can make it in my Kitchen Aid mixer. (I don't have a Bosch)
2 pkg dry yeast
2 c. warm water
1 T. sugar
4 t. salt
5 c. white flour
1/2 c. honey
1/2 c. vegetable oil
1/2 c. hot water
2 c. wheat flour
Soften dry yeast in warm water. Add sugar, salt, and 2 c. white flour. Beat until smooth and let stand 1 hour. Mix honey, vegetable oil, and hot water, stir to lukewarm. Add to yeast mixture. Add wheat flour and remaining white flour, mix until smooth. (then I take it out of my mixer and put it in another [greased] bowl) Let rise until double. Punch down and let rise again. Shape into loaves and let rise again. Bake at 350 for 25-30 minutes, or until golden brown.
My recipe says it makes 4 loaves, but I have large loaf pans, so I only make 3 loaves.

Posted November 16th, 2009 10:48 AM IP Golden Cornbread
1 c. flour
1 c. yellow cornmeal
3/4 c. white sugar
4 tsp. baking powder
1/2 tsp. salt
1 c. milk or butter milk
1 egg, slightly beaten
1/4 c. butter, softened
Combine dry ingredients. Add wet ingredients and beat for one minute. Don't overbeat. Pour into a greased 8x8 " pan, or into muffin tins. Bake at 375 for 45 minutes.
I had put it in the muffin tins and don't think I had baked it for 45 min. then. I've made different cornbread recipes and we liked this one pretty good. Jan
