Hi Lydia

Here's one we think is good!

Green Chile Enchiladas
(I think we may have brought this over when you were facing those morning sick days...)

Brown together:
1 1/2 # ground beef (or diced chicken)
1 1/4 c. onion, chopped
mix in:
1 T. chili powder
salt/pepper
1 tsp. ground cumin

3 c. Jack Cheese, 1 c. reserved
12 tortillas

Spoon enough meat mixture & cheese on each tortilla to cover 1/3. Roll & place seam side down in greased 9x13.

Combine:
1 can cream of chicken soup (I make mine...)
1 1/2 c. sour cream (I use plain yogurt)
1, 4 oz. can green chiles, diced

Pour over tortillas. Bake @ 375 for 20-25 minutes. Sprinkle with reserved cheese the last 10 minutes.

My moms foolproof recipe

Sour cream
cream of chicken soup
onion powder or flakes

Mix together and take some out for topping. Add chicken and shredded cheese to the rest and fill tortillas then top with remaining topping. Bake at 350* till hot in the center.

Yep, that's how she cooked and she is the best!!
