Posted May 21st, 2012 05:35 PM IP  My husbands family is going to be here for about a week (super, super excited we are!) and I was thinking about meals for while they're here. Breakfast and supper are easy...but it's lunches I'm worried about. I never really make lunch a lot...mostly just eat leftovers. It'll probably be mostly for the ladies and kids (9 of them)...
So, any suggestions for quick, simple lunches that both kids and adults will love?
Things I've thought of so far:
Sandwiches/Wraps
Quesadillas -Janelle

Posted May 21st, 2012 07:25 PM IP  Taco salad... I know not all children like lettuce, but you if you let them each compile their own it can be made child friendly. You could do walking taco/ taco in a bag style if you want to save dishes
Homemade corn dogs made in a muffin tin. There are recipes for these, but basically it is just corn muffin batter with a hotdog in the middle.

Is only having 2 meals an option on some days, with a snack for the kiddos inbetween? That can save a lot of planning!

Posted May 21st, 2012 10:11 PM IP  A stir fry rice dish. Have cooked rice in the frig. Then All you have to do is throw it in a pan with some hot oil and veggies. The Indonesian fried rice is great out of east west cookbook.
Chick pea salad with fruit
A cold bean salad
A cold barley salad, with or without chicken
A cold pasta salad-tex mex with corn, black beans, cheddar cheese, green pepper, red onion, olives and ranch dressing and salsa mixed for dressing, with or without chicken
Or a vinegrette dressing with pasta, (veggie rotini is great), cucumber, tomato, green pepper, Parmesan cheese. With or without chicken. Add any other veggies you like as the vinegrette gives great flavor to broccoli, squash, ect
Pasta salad with bacon, cheese, tomato, torn head lettuce and ranch dressing
I like cold salads in the summer because it keeps your kitchen prep time to a minimum. And you can fix a lot of this ahead of time and store individually in the frig, then open dump and stir. Or they can be prepped and assembled in the morning and chilled til lunch.
Another idea is fresh veggies. Dip and grilled cheese sandwiches. These were easy to do. Ton of them if you bake them in the oven instead of a griddle.
Tator tot casserole-do ahead and freeze.

Another big hit here is mini pizzas. Spread pizza or pasta sauce on open face rolls, bread, French bread, ect. Top with shredded mozzarella and pepperoni and toast in oven.

Posted May 22nd, 2012 09:25 AM IP  My family is coming this weekend and we are only doing the two meal thing. So much easier!!!!! There will be fruit and snacks for the kids if they want it. But we usually try for an early supper than around 4:30-5:00. Love that schedule when we are all together.

Or just do cereal for breakfast and then something more healthy like the ideas above for lunch.
These suggestions are helpful for me too! I am looking at a summer of school children here who need food and wasn't sure what to make.
A few other ideas:

Egg salad Sandwiches
Chicken Salad Sandwiches

Posted May 22nd, 2012 11:55 AM IP  I would differ in that 3 meals a day works better for us even if one is very light. The children are always too excited to sleep late if they are with cousins or friends and it works better to have regular mealtime and keep everybody on schedule and less snack food. A recipe that I thought of would be
