I've just tried cous cous for the first time, and love how easy it is to cook. But the cous cous I got was preseasoned, so I need recipes. (I don't like to get mixes on a reg basis.) Side dishes, salads, casseroles... if you like it, I'd love to know how you fix it.

I haven't made this recipe yet, but I have a box of Couscous waiting to be used and thought this recipe sounds good.

Colorful Couscous
1/3 c. each - chopped onion, green pepper, red pepper
2 minced garlic cloves
Saute in 2 Tablespoons olive oil until tender. Stir in:
1 can (14 1/2 oz) chicken broth
1/4 c. water
1/2 t. salt
1/4 t. pepper
Bring to a boil. Stir in 1 pkg (10 oz.) couscous. Cover and remove from the heat. Let stand for 5 minutes. Fluff with a fork.

I like to toss it with Italian dressing, peppers, cherry tomatoes, and olives for a pasta salad.
